Green Banana Salted Date Smoothie

I’ve been making a conscious effort to add more Thailand-friendly whole food prebiotics to my diet.  One way to achieve this is to eat more green bananas.  Green bananas are about as commonplace as dirt in this country, with a price tag to match.  Problem is though, who really wants to eat one?  To find a way to answer that question with the words, “I do,”  I’ve been spending time with my blender on Operation:  Green Banana Smoothies.

This below is an adaptation of recipe I found on Goop for a salted caramel smoothie – the sweetness and caramel effect is supplied by dates.  I reduced the vanilla and dates somewhat though, as I don’t have much of a sweet tooth, and added green bananas and inulin to bestow it with prebiotic power.

It’s also a Plant Paradox friendly recipe, as I am eating that way more often than not these days.

(Prebiotic) Green Banana Salted Date Smoothie

Servings: 2 people
  • 1/3 cup chopped medjool dates
  • 3/4 cup chopped green bananas
  • 1 cup fresh coconut milk
  • 1 tsp fresh lemon juice
  • 2 tsp inulin optional
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups ice cubes
  1. Put all ingredients in a blender and blend until smooth.  Enjoy!
